Well, it depends on many things, such as preference, door size, security level requirements etc.
If you're using the item as a general bolt and it doesn't need to be 'heavy duty' then you may wish to consider a smaller size.
The larger bolt can be attached with larger (thicker) screws, and the large plate means the screws will be distributed further apart, making it harder to rip the lock off the door. It will also accept a larger padlock size.
A smaller bolt may be suited to an installation where strength, deterrence and size is not essential.
A larger bolt is typically recommend for theft deterrence, doors where force may be applied (like livestock housing), if larger padlocks are required etc.
Ultimately, the deciding factor for which bolt you can use simply comes down to space. Check your door is thick enough to accommodate appropriate sized screws.
Check your frame is wide enough/alterable so that the the bolt socket can be attached (it may need to be recessed in if your frame protrudes further out than your door).
