Obviously the normal use of this product is to install under a sink, but my washing machine and dishwasher are in a utility room. I have 40mm pipe with similar screw fittings as pictured, so can I just swap the existing trap for this one and not use the top sink waste inlet? Can I use as is? If not.. could I either block off the top inlet, or is there an attachment such as a vent, or plain piece of pipe I could insert to effectively take the place of a sink?

Answer: 
Probably - but if used alone you'd get backflow up out of the sink connection. if you blank it off, you might get an airlock that would prevent proper function of the appliances. I'd suggest a vertical pipe coming up above the fitting - but you'd have to experiment regarding length.
